Powdered cinnamon is mostly old, and mostly disappointing. Quills keep their oils. They also rest, infuse, and reuse.

At home

  • Crumble what you need: Snap a quill, grind it fresh in a spice mill. The scent is the answer.

  • Steep in liquid: Quills give up flavor slowly in milk, syrup, broth. A long simmer is the point.

  • Reuse a quill: Rinse, dry, reuse. A single quill can flavor 3–4 batches before retiring.
